Detox Soup Recipe
Happy Wednesday!! I had no intention of posting this recipe, but I received quite a few messages/questions about it, so here it is!
Several people wanted to know what makes it a detox soup or how to do the cleanse, but there is no program, that’s just the name I made up for this soup. I always make it after an over-indulgent weekend or when I’m feeling under the weather. It’s the perfect way to eat a lot of veggies and barely any fat. I cook rice separately so that I can add as much or as little as I want. Look, it won’t be the most amazing thing you have ever tasted, but if you divide the entire pot into 5 servings (which gives you HUGE servings), each bowl is just 143 calories, 17 g of protein, 2 g of fat, and 13 g of carbs (before you add the rice). It’s the perfect way to eat a lot of food for a few calories.
1 lb ground chicken
1 onion, chopped
1 10 oz bag shredded cabbage
1 10 oz bag shredded carrots
8 cups water
3 low sodium bouillon cubes (I use veggie, but you can use chicken)
21 Seasoning Salute (or any salt free seasoning)
Cook ground chicken and onion together over medium heat until chicken is cooked through. Add cabbage, carrot, water, and bouillon. Cover, turn heat to high, and bring to a boil. Turn heat to low and simmer for 10 minutes. Add salt, pepper, and seasoning to taste. Serve with cooked rice.
That’s the other great thing about this recipe: it is SUPER fast and easy! It also easily packs for lunch, which I love. If you make it, let me know how you like it!
