Eats Lately

Happy Monday!  I thought it was about time for another Recent Eats post.  It’s been fun to go on this blogging journey and learn what my readers want.  I was just telling Lance that I feel like a person who can speak about fashion.  I’ve owned a retail store for 10 years, so I know a thing or two.  Fitness and food…I’m definitely not an expert in either of those fields, but they are some of my most popular posts!  I do LOVE food and working out, so I’m glad it’s something you’re interested in, too.  Here is what I’ve been eating lately, and I’m sharing a few recipes, too (I use that term loosely since I tend to just throw stuff together).


Turkey bacon // Protein pancakes with maple syrup + cinnamon

I’ve never mastered the protein pancake until now!  These were delicious.  Definitely NOT a real pancake, but they satisfied my craving for something sweet and carb-y for breakfast.

Protein Pancakes

1/2 banana, mashed
1 T almond milk
1 scoop protein powder (I used Tone It Up Peanut Butter flavor)
1/4 C egg whites
Cooking spray

Combine all ingredients and cook in skillet over medium heat.  Top with cinnamon and maple syrup.

Low carb tortilla // Egg whites // Turkey bacon // Onions // Mushrooms // Cheddar cheese // Enchilada sauce

I love an easy egg white scramble for breakfast.

Ezekiel toast // Almond butter // Banana // Granola // Turkey bacon

This is SO good, I have eaten it like 20 times.  I love the toast + almond butter + banana combo, but wanted to jazz it up a little.  The granola adds the perfect crunch and the right amount of sweetness.

Almond milk // Frozen banana + blueberries // Catie’s Greens powder // Protein powder // Pumpkin pie spice // Water + Ice

My smoothies are pretty much always the same, but I love this combo.  It’s only about 200 calories, so it’s the perfect light breakfast or snack.  In the summer I just need something cool and refreshing like this!  I also used the peanut butter Tone It Up protein powder for this.  It’s a vegan protein, which I feel like doesn’t sit as heavy as whey protein.

Protein waffle // Turkey bacon

I saw these Kodiak protein waffles in the freezer section and wanted to give them a try.  It’s nice to have something super easy on hand if I need a quick breakfast.  They are really good and definitely super easy.

Grapefruit // Egg whites // Turkey bacon // Cheddar cheese

Another easy egg white scramble.  The grapefruit makes me LOL because I used it as a cocktail garnish over the weekend and then finished it up for breakfast!

Low carb tortilla // Egg whites // Onions // Mushrooms // Cheddar cheese // Guacamole // Enchilada sauce

As always, some form of tacos are in my rotation.


Lettuce // Banana peppers // Onions // Cucumber // Olives // Feta cheese // Turkey

A big ole chopped salad is my go-to lunch.  I like to try and get as many veggies as I can at lunch!  I always just top it with a little olive oil and red wine vinegar.

Toscana cheese // Chicken deli meat // Tortilla chips // Oil free hummus with Everything but the Bagel seasoning

And sometimes I eat like a toddler, it’s fine.  But really, if I could eat all my meals like this, I would!  This is the Roots brand oil free hummus and I love that it doesn’t have as much fat.

Yum!  This was simple, easy, and delicious!

Another big ole chopped salad.  The great thing about chopped salads: as long as I keep lettuce and cucumber handy, I can usually find enough other stuff in my fridge to fill the bowl.

Chick Fil A Original chicken sandwich // Large Diet Lemonade

I just had to throw this in here because YES, sometimes I eat Chick Fil A.  BUT I never get fries!


Spaghetti squash // Ground chicken // Mushrooms // Onions // Truffle oil // Parmesan cheese

This dinner was BOMB.  I cooked everything here separately (which I mostly do since I’m counting macros), then just threw it all in a bowl and topped it with truffle oil and parmesan.  Truth be told, you could top pretty much anything with truffle oil and parmesan and it would be amazing!

Lettuce // Ground chicken with taco seasoning // Tortilla chips // Onions // Cheddar cheese // Sour cream // Black beans // Enchilada sauce

I literally eat a taco salad every week (and tacos).  It’s one of my favorite foods and feels like a treat.

Steamed cabbage in vegetable broth // Turkey burger

I call this dinner: I-over-indulged-all-day-and-now-can-only-eat-meat-and-vegetables.  I actually did end up topping the burger with a slice of havarti cheese.  This made a super yummy, healthy, low calorie meal!

Broccoli // Pork loin // Mashed sweet potato with cinnamon

Lance has started making a spice rub for pork (I’m sure it would be great on chicken, too) and it is SO good, you have to try it!  HERE is the original recipe, but when Lance makes it, he doesn’t use brown sugar, he cuts the salt in half, and he adds more cayenne pepper.  It’s seriously the best rub I have ever had.  It’s shown here on a pork loin, which is different than a tenderloin and SO good.

Shrimp // Grits // Chicken sausage // Red pepper // Green onions // Cheddar cheese

It was the weekend and I wanted a splurge meal at home, so this is what I made.  It turned out REALLY good!

Shrimp & Grits

1 c grits
3 c water
1/4 c half and half
1/4 c parmesan
Salt and butter to taste

The key to great grits to more liquid + longer cooking time.  Bring water and half and half to a boil, add grits and cook on low, stirring occasionally, for 30 minutes.  Add parmesan, salt, and butter.

1 bag red Argentinian Shrimp (this is frozen at Trader Joe’s)
1 red bell pepper, chopped
1 package sweet Italian chicken sausage (I used Bilinski’s brand)
1/4 c half and half
Dash of Old Bay Seasoning
Cheddar cheese, shredded
Green onions, chopped

Chop chicken sausage and sauté in a pan over medium heat.  Remove and add red pepper, cook until soft.  Remove red pepper and add shrimp to the pan.  Cook for a few minutes until pink.  Add the sausage and red pepper back into the pan and add half and half and a dash of old bay seasoning.  Cook for a few minutes until the sauce reduces slightly.  Serve over grits and top with cheddar cheese and green onions.

Grilled sausage // Corn // Peppers // Onions // Asparagus // Avocado

I had this meal at a friend’s house and it was so good that I had to share.  My friend’s husband grilled sausages, peppers, onions, corn on the cob, and asparagus.  He brought it inside, chopped it all up and cut the corn off the cob into the bowl and topped it with avocado.  It was SO good, y’all!


Celery // Cucumber with Chili Lime Seasoning // Toscano cheese // Sweet potato crackers // Hummus

I can’t leave out a few snacks because I LIVE for snacks.  I prefer smaller meals + more snacks, so that’s how I plan my day.

Turkey // Hummus // Cucumber // Everything But The Bagel seasoning

This was such a great snack.  I love the combo of hummus and Everything But The Bagel seasoning.
