Weekend Recap + Chili Recipe

Happy Monday!  Did everyone have a good weekend??  Ours was pretty chill, here is what we did!

We had friends over for chili Friday night.  Everyone always LOVES my chili, which is so funny because it’s not even a recipe and doesn’t take very long!  I thought I would share how I make it.

Beef Chili

2 medium onions, chopped
4 poblano peppers, chopped
1 yellow bell pepper, chopped
1 orange bell pepper, chopped
1 jalapeno pepper, chopped
2 cloves garlic
1 T olive oil
2 lbs ground beef (I always use grass-fed)
4 T chili powder
2 T cumin
1 T oregano
dash of red pepper flakes
2 28 oz. cans diced tomatoes
2 T tomato paste
salt to taste

Heat olive oil in large pot.  Add onions, all peppers, and garlic and sauté until softened, about 7 minutes.  Add ground beef to the pot and cook until cooked through, another 7 minutes.  Add all spices to the pot and cook for 1 minute.  Add both cans of diced tomatoes and tomato paste and stir.  Cover and simmer for 20 minutes.  Add salt to taste and adjust spices as needed.

I like to serve mine topped with avocado, shredded cheese, and sour cream.  We always use Scoops tortilla chips, but this time we bought Cornbread Crisps from Trader Joe’s and everyone loved them!  I was cooking for my friends who own The Good Kitchen….so no pressure there, haha!  They loved it, so that made me very happy.

Saturday morning I went to Flywheel, which I have been loving lately.  There is something about it being totally dark and no one looking at me that I love haha.  I grabbed a juice afterwards with my friend Kendrick (she owns KK Bloom), and we were twinning!

Saturday night we celebrated my friend Erin’s engagement (she manages Boem).  Lance and I had dinner together before at the Crepe Cellar, which was delicious.

Sunday we had a relaxing day.  I have been cleaning out my closet to donate and take to the consignment store, so that has been a process.  I realized there were baskets in my closet that I had not looked in since we moved in our house 3 years ago.  Sooooo, needless to say, I got rid of everything in those baskets!  I went to hot yoga at Y2, then we met some friends at the brewery.  The weather here this weekend was gorgeous!

I leave for Napa on Thursday, so I have a busy week prepping for that.  Happy Monday, babes!
